UMAMI ORZO

Each month we select one of our favourite ingredients to create a new recipe.  Thought I would crank up the flavour this month and play around with ingredients known to be rich in umami, to really add a deep savouriness to orzo, which is simply rice-shaped pasta.  This is a very rich and comforting dish that doesn't hold back on flavour.

Thanks to doing a food styling course with Sarah Cook at Leiths, I got invited (after many an email to Sarah) to spend a day testing recipes at the BBC Good Food kitchen.  Definitely one of the best days I have had in the kitchen, and great insight into how some of the nation’s favourite food people spent the first part of their careers.

MY SECRET INGREDIENT...SPICED BLACK RICE VINEGAR

Spiced Black Rice Vinegar is a product that is less than 3 months old in the UK retail marketplace and is now one ingredient that I couldn’t cook without.  Versatile products are often well over-used, but one taste of this product will certainly bring lots of ideas to any serious food fan.  I can still remember my first ever taste: the week before my new job I was sent a lovely big box of new products to try, and this was my favourite.
