SUSPIRO DE LIMENA

Or Sighs of a Lima Lady to you and me. This is a fantastic recipe I found and amended having spent a lot of time researching Peruvian food, which is certainly going to be a big thing in London this year.

The name apparently comes from a few difference sources, but the one that works best for me is that this dish is sweet and light like a woman's sigh!  It's dulce de leche and meringue and really is a taste sensation!  Here I have added a little magic with Spiced Black Rice Vinegar to flavour the dulce de leche instead of the usual vanilla.
